Chicken or Tofu Quinoa Bowls!
Hey guys I’m back with another easy delicious recipe!!! Chicken or Tofu Bowls with balsamic dressing! So let’s get into what you need!!!
• 1/4 of balsamic vinegar or you can just purchase the dressing
• 2/3 cup of water
• 1/3 to 1/4 cup of quinoa, rinsed!! y’all lol
• Boneless chicken breast strips! I purchased the Tyson brand they were cheap and on sale!
* For my non meat eaters! I would probably go with firm tofu for this dish!!
• Now you need garlic powder, salt, and pepper about a 1/4 teaspoon of each
• 1/4 pound of fresh asparagus, I honestly used the whole bunch cause I’m made four meals
• Plain greek yogurt and spicy brown mustard, but only if you plan on making your balsamic dressing and you will need 1/4 of each
• 1 medium ripe avocado peeled and sliced and next my favorite cherry or plum tomatoes halved about 6 to 8
DIRECTIONS: Pre Heat Broiler
• Place vinegar in a small pan and bring to boil! Cook until it’s a little thick! Transfer to a bowl and put in fridge to cool! Must be cooled all the way!
• In a small pan bring your water to a boil then add quinoa. Reduce your heat to a simmer. Cook until all liquid is absorbed.
• Toss chicken or Tofu in oil and add seasoning make sure everything is coated and well seasoned
• Toss asparagus in seasoning and oil as well
• Place chicken and asparagus separately on a sheet pan with foil
• Broil for about 8 minutes
• Now if you make your dressing take your balsamic vinegar, yogurt, and spicy brown mustard and stir together
• Place Quinoa in bowl with chicken, asparagus, avocado slices, and tomato
Now let’s eat!
Ok guys this took about 30 minutes and only cost me about 15 dollars! Whooo baby this is Bougie on a Budget!!!
